Bubble ‘N’ Squeak

Pan fried vegetables and mashed potatoes join to make a delicious dish in this traditional British recipe.

4tbsp soy margarine
1/2c finely chopped onion
leftover mashed potatoes, prepared with almond or coconut milk
leftover vegetables, such as cabbage, carrots, peas or brussel sprouts, finely chopped
salt and pepper to taste

1. In a large pan, melt the margarine and fry onion until soft, or about 2 minutes.

2. Increase heat and add mashed potatoes and vegetables. Fry for 10 minutes in the melted margarine, turning every few minutes to ensure even heating.

3. Press the mixture into the bottom of the pan with a spatula and leave to fry for one minute. Turn and repeat.

4. Serve while hot and season to taste. Enjoy!
